Cowboy Caviar

Old West Bean Dip.

1 can Black-Eyed Peas
1 can Black Beans
1 can Sweet Corn
1 cup Roma tomatoes (diced)
1 cup Bell Peppers* (diced)
* we used ⅓ cup each of Red, Green, and Orange
⅓ cup red onion (diced)
½ cup Cilantro (chopped)
¼ cup Olive Oil
¼ cup Lime Juice
½ teaspoon Sugar
½ teaspoon Cumin
¼ teaspoon Garlic Powder
1 teaspoon Chipotle Powder
Salt & Pepper to taste


  1. Rinse and drain beans and corn; dice Red Onion, Tomatoes, and Bell Peppers; and chop Cilantro. Place in large bowl.
  2. In a small bowl whisk together Olive Oil, Lime Juice, Sugar, Cumin, Garlic and Chipotle Powder.
  3. Pour Olive Oil mix over Bean mix, gently stirring until well coated. Cover the large bowl and refrigerate at least 1 hour, though preferably overnight, before serving.
