Potato skewers with Zucchini and Bell Peppers.


3 Potatoes – chopped
1 Zucchini – chopped
1 Red Bell Pepper -seeded and chopped
1/4 cup Herb Olive Oil
Salt & Pepper


  1. Preheat oven to 350°F
  2. Chop Potatoes and Vegetables place on skewers alternating potato,zucchini, and red bell pepper.
  3. Brush with Herb Olive Oil until evenly coated and season with salt and pepper – Transfer to baking sheet
  4. Bake for 40 – 45 mins
  5. Serve
