Potato skewers with Zucchini and Bell Peppers.
3 Potatoes – chopped
1 Zucchini – chopped
1 Red Bell Pepper -seeded and chopped
1/4 cup Herb Olive Oil
Salt & Pepper
- Preheat oven to 350°F
- Chop Potatoes and Vegetables place on skewers alternating potato,zucchini, and red bell pepper.
- Brush with Herb Olive Oil until evenly coated and season with salt and pepper – Transfer to baking sheet
- Bake for 40 – 45 mins
