Canapés are traditionally defined as toast points topped with cheese, caviar, or other savory food. Our versions are more like mini open face sandwiches. We toasted slices of bread and cut them into halves diagonally. Then we prepared three varieties for our guests to enjoy

The Atlantic
Smoked Salmon
Cream Cheese

  1. Spread Cream Cheese over toast half
  2. Top with single layer of Smoked Salmon

The Philly
1/4 lb Roast Beef thin sliced
Cheddar cheese (shredded or thinly sliced)
Caramelized Onions

  1. Preheat Broiler
  2. Place single slice of Roast Beef on toast
  3. Top with spoonful of Caramelized Onions
  4. Sprinkle Cheddar Cheese
  5. Place on Baking sheet
  6. Broil  just until cheese is melted

The Bombay
Chicken Curry Salad
2 cups cooked Chicken diced
1 stalk Celery diced
1/2 cup Mayonnaise
3 tbsp Curry Powder

  1. Combine ingredients in medium mixing bowl and stir
  2. Cover and chill until ready to serve
  3. Top toast with a heaping spoonful of Chicken Curry Salad
