Lobster Thermidor Puffs

Any fan of Boardwalk Empire knows that Nucky Thompson takes his Lobster Thermidor seriously. In the season 2 episode A Dangerous Maid he makes his displeasure clear when informed the last plate had already been served to his rival.


To pay tribute to this classic scene while staying true to our finger food motif we came up with these bite size puff versions of the culinary staple. 


1 lb Lobster cooked
1 shallot, finely chopped
1/4 cup Heavy cream
1/4 cup white wine
2 tbsp butter
1 tbsp lemon juice
1/2 tsp Dijon mustard
1/2 tsp Paprika
Salt & Pepper
1/4 cup grated Parmesan cheese
Pre-packaged Phyllo Shells


  1. Remove meat from Lobster tail and claws and cut into 1/4 pieces
  2. Melt the butter in a large skillet over medium heat. Add the shallot; cook and stir until tender. Mix in white wine and double cream. Bring to a boil, and cook until reduced by half. Mix in the mustard, lemon juice, salt and pepper
  3. Preheat Broiler
  4. Add lobster meat to mixture and stir until evenly coated. Spoon mixture into pastry shells and sprinkle with Parmesan
  5. Broil for 2 – 5 minutes, until golden brown. Serve immediately.
